Request for Venison Recipes

Please send me your best deer recipes! Seems like a great lean meat, but I'm trying to develop a taste for it, or to smother the taste of it works for me too. I've got 4 available right now, other than substituting it directly for hamburger, like in Italian Shells Hamberger Helper, but apparently overbrowning venison makes it a little tough - so don't do that.

Tonight we tried meatloaf, found a simple recipe online and modified it based on the comments :

Originally we modified the recipe for the garlic powder, onion, & diced tomotoes, but forgot to season it when mixing everything together. Also decided it was way too soupy with just a half-cup of bread crumbs (ran 4 slices of stale white bread, Italian through the food processor), and ended up adding a cup and a half before it looked okay. Finally the sauce was simplified, just sprinkled brown sugar after dividing the meat between the two pans, and zig-zagged ketchup over that (which saved us from forgetting the spices). Oh yeah, and the worchestershire was supplemented with an additional T of soy sauce and a couple drops of smoke flavoring.

The next recipe we'll try is chili, specifically the one we received from a Field and Stream mailer, which has bacon, chipotle chilis, jalepenos, honey, molasses, Guinness beer, and wine - captured online by calorie count (I know, I had you at 'bacon'):

(For the record - 279 cal, less than 6g of fat, 26g carbs & 25g of protein, but more than 50% of your daily sodium allowance)

So - Any other good ideas? If we try any more venison recipes, I'll let you know how it goes!
